Die Karotten sch\u00e4len und in d\u00fcnne Streifen schneiden oder hierf\u00fcr den Sparsch\u00e4ler nutzen. Eine Handvoll schwarze Oliven in Scheiben schneiden. Zwei Knoblauchzehen zerdr\u00fccken. Die Garnelen und Calamari waschen und abtropfen lassen. Die Calamari ausnehmen: Dazu den Kopf mit dem Schwert aus der Tube ziehen. Die Beine unterhalb des Kopfes abschneiden. Diese k\u00f6nnen im Anschluss mitgebraten werden. Die Haut mit einem scharfen Messer von der Tube ziehen. Die Tuben der Calamari in Ringe schneiden. <\/p>\n\n\n\n<p>Die Garnelen in reichlich Oliven\u00f6l und Knoblauch f\u00fcr zwei Minuten von jeder Seite scharf braten. Beim Wenden mit Limettensaft und Grauburgunder abl\u00f6schen. Der Fond kann zum Beispiel f\u00fcr So\u00dfen verwendet werden. Den Wein verdunsten lassen und die Garnelen aus der Pfanne nehmen. Nun die Calamariringe und -Beine f\u00fcr etwa anderthalb bis zwei Minuten garen, sodass sie noch weich sind. Auch diese mit Limettensaft betr\u00e4ufeln. <\/p>\n\n\n\n<p>Die Meeresfr\u00fcchte unter den Salat mischen. Diesen mit \u00d6l, Limettensaft, Salz und Pfeffer abschmecken. Es bietet sich an, die Garnelen obenauf anzurichten.
