{"id":1309,"date":"2023-07-22T11:19:04","date_gmt":"2023-07-22T11:19:04","guid":{"rendered":"https:\/\/chef-igor.com\/?p=1309"},"modified":"2023-08-20T15:11:38","modified_gmt":"2023-08-20T15:11:38","slug":"koestliche-pilzravioli","status":"publish","type":"post","link":"https:\/\/chef-igor.com\/?p=1309","title":{"rendered":"K\u00f6stliche Pilzravioli"},"content":{"rendered":"\n<p><em>Zutaten (f\u00fcr vier Personen)<\/em>: 300-500g Champignions, 250g Ricotta, Oliven\u00f6l, Salz, Pfeffer, Tr\u00fcffel\u00f6l, 300g Mehl (Typ 00), vier Eier, Zwiebel, 200ml Sahne, Thymian, Rosmarin, Pecorino, Aceto Balsamico, Zitrone, Sp\u00e4tburgunder.<\/p>\n\n\n\n<p>Die F\u00fcllung: 150g Champigions kleinw\u00fcrfeln und in einer Pfanne mit Oliven\u00f6l braten. Dann mit einer Knoblauchzehe in ein Gef\u00e4\u00df geben und mit einem Stabmixer zerkleinern. Die Mischung unter den Ricotta heben. Abschmecken mit Salz, Pfeffer und einem kleinen Schuss Tr\u00fcffel\u00f6l. <\/p>\n\n\n\n<p>Die Ravioli: 300g Mehl, 80ml Oliven\u00f6l und drei ganze Eier zum Teig kneten. 30 Minuten ruhen lassen. Die Arbeitsfl\u00e4che bemehlen und den Teig mit einem Nudelholz ausrollen. Dann Rechtecke bzw. Kreise ausstechen und mit einem verr\u00fchrten Ei bestreichen. Die F\u00fcllung auf die Mitte der Nudeln platzieren. Dann die Nudeln zusammenfalten und die Enden mit einer Gabel zusammendr\u00fccken. Die Garzeit in gesalzenem Wasser betr\u00e4gt 5-6 Minuten. <\/p>\n\n\n\n<p>Die Sauce: Zwiebeln in Oliven\u00f6l anschwitzen, dann die Pilze braten. Dann mit Sp\u00e4tburgunder und Sahne abl\u00f6schen. Dicklich einkochen. Abrunden mit einem Spritzer Zitronensaft, Zitronenzesten, einem Spritzer Aceto Balsamico und etwas Pecorino.
