Dann mit Salz und Pfeffer einreiben. Dies kann auch nach dem Anbraten geschehen. Nun die Fettseite rautenf\u00f6rmig einschneiden. Hernach die Entenbr\u00fcste erst von der Fettseite, danach von der anderen Seite 7 Minuten bei mittlerer Hitze mit Butter und Zwiebeln braten. Hiernach bei 75 Grad im Ofen bis zum gew\u00fcnschten Grad weitergaren, etwa in Alufolie. Es kann ansonsten eine Bratenform verwendet werden. W\u00e4hrenddessen den Sud in der Pfanne mit reichlich Sp\u00e4tburgunder abl\u00f6schen. Lorbeerblatt und Wachholderbeeren hinzuf\u00fcgen.
